Situated near the town of Auxerre, Chablis’ vineyards are located halfway

between Paris and Dijon, the capital city of Burgundy.

A little over a century ago, the Yonne was one of France’s major wine producing

areas. Wines from Chablis were delivered to Paris and its region atop log booms on inland

waterways.

Chablis was already much appreciated by the clergy in the Middle Ages for its

exceptional whiteness and clarity. They used it as their wine for mass as it

symbolized extreme purity. Chablis thus became a legend. It was the first wine to

win Europe over, appealing to princes and bishops alike.

Chablis is now one of France’s great dry white wines. It is well-known throughout

the world.

 

Domain:

 

This family-run estate has been passed down over several generations. It is located at

Fontenay-près-Chablis, a small village just to the northeast of Chablis, on the right bank

of the Serein River.

Today, Guy Mothe and his three sons, Jean-Louis, Thierry and Vincent, own 43 hectares of

vines located on the hillside slopes throughout the various appellations of Chablis.

 

Producers:

 

Jean-Louis and Vincent Mothe work in the vineyards while Thierry Mothe, who now

presides over a state-of-the-art winery, takes care of vinification, aging, bottling and

filling of orders. It is important to him that his Chablis be pure and mineral, not subjected

to barrel aging which would mask the fruit. Thierry Mothe is also the president of the

Yonne’s association of independent winegrowers.

 

Vinification:

 

The vineyards are planted exclusively with Chardonnay and sit on Kimmeridgian soils,

producing dry, white wines which are clear, lively and light, with a characteristically

yellow color and subtle green and white highlights.

Great care is taken during vinification, respecting the use of traditional Burgundian

methods coupled with modern technical means.
