Séquoia Single Malt (500ml) is an Organic Whisky 100% made in France in the mountains of the Vercors.

The organic barley malt is distilled at low temperature in a very unique in the world Alambic (Still), then aged 3 years in oak barrels.

Tasting notes:

The color: yellow hay enhanced by a few subtle golden reflections.

The nose: elegant cocktail of aromas of dried flowers, sweet spices and acacia honey.

after stirring, appearance of fresh bread notes and of precious wood.

The mouth: very nice balance between structure, sweetness and aromatic profile.

after a few minutes of aeration, the scents of dried flowers mix with fresh bread flavors and honey.

The finish: aromatic stretching in length and seducing with its mineral and tonic accents.

History:

All is 100% Organic in this distillery including its own spring water.

It is at the foot of a centenary Sequoia that our unique in the world Alambic distills at low temperature (around 50C) during 14 hours.

Then aged in French and American oak barrels.

This 42% vol. Single Malt is cold unfiltered with natural colours.

It reveals all the fineness and the elegance of the aromas of Organic Barley with spring water from the Vercors.

The distillery is settled in an ancient silkworm farm (Magnanerie) from the late 17th century.

Séquoia Tourbé (Peated/Smoky – 500ml) is an Organic Pure Malt 100% made in France in the mountains of the Vercors.

The organic barley malt is distilled at low temperature in a very unique in the world Alambic (Still), then aged in oak barrels.

Tasting notes:

The Colour: its very light colour fortifies the surprise of the intensity of the peat.

The nose: powerful and distinctive with elegant peaty notes. After breathing the notes become fresher.

The mouth: delicate and balanced structure which brings aromas of roasted wood.

The finish: long and neat, smoky and delicately peated.

History:

All is 100% Organic in this distillery including its own spring water.

Location:

Chateau Puy-Razac, 6 ha single plot, is located at the foot of the famous “Pavie” hillside, in the southern part of Saint-Emilion. With a nice exposure on a magnificent sandy-clayey terroir.

The grape variety is unusually marked by the high proportion of Cabernet Franc (45%) compared to Merlot (55%).

The combination of this classy terroir and this peculiar blend gives very well structured wines that are known for their ability to age.

Viticulture:

When she inherited Chateau Puy-Razac from her grandfather – Guy Thoilliez, former vineyard manager at Chateau Monbousquet in Saint-Emilion – Catherine Leymarie-Thoilliez decided to have her wines evolving through a compromise-less, drastic seek for quality, with all the respect for her grandfather’s legacy.

It has been achieved through the most modern cultural techniques: short pruning, disbudding, green harvest, leaf thinning, hand picking.

Vinification:

The sorted, unstemmed and crushed grapes are brought back to the vinification cellar and put into small concrete thermo-regulated vats.

There, a cold pre-fermentation maceration (under carbonic dioxide atmosphere to reduce the use of sulfite) allows a better extraction of colour and aromas.

Then the alcoholic and malolactic fermentations take place by the raise of the must temperature during the maceration.

100% of the wines are aged in oak barrels.
