Amazing full-bodied sweet white wine with an exotic nose and a vivacious finish (100% Petit Manseng).

Handpicked harvest in November after the first snowfall on the Pyrénées.

 

Food pairing:  Aperitif, foie gras, sheep cheese, dessert...

 

Serving temperature: 10-12°C 

 

Tasting notes:

 

A nose consisting of exotic fruits (pineapple, mango), full bodied and decadent in the mouth, vivacious in the finish.

 

Production:

 

Among the best terroirs, sheltered within steep sided valleys facing the Pyrenees, a selection of Petit Manseng grapes is made from old vines after passerillage (drying on the vine). 

Hand picking by successive selections takes place in November.

 

Vinification:

 

Selection of the finest grapes of high sugar content and rich aromatic elements, moderate pressing, settling, controlled temperature during fermentation, matured on fine lees for some months, then in stainless steel tanks for 24 months before bottling.
