Tasting notes: 

 

Sauvignon Blanc is well adapted to the terroir at Cibadiès. 

It gives a fresh and aromatic wine, characteristic of this noble grape variety, with a little Mediterranean touch adding extra suppleness and complexity. 

A wine of a lovely pale yellow color, of great limpidity and brilliance, with an intense nose offering agreeably fresh notes of citrus fruits and boxwood combined with hints of exotic fruits. 

The remarkable balance of acidity and smoothness gives bright vivacity to the palate of great length. 

 

Domain:

 

The Domaine de Cibadiès covers 95 hectares to the west of Béziers, in the commune of Capestang, between the canal du Midi and the Oppidum of Ensérune. 

 

Terroir:

 

The sun-drenched limestone clay soils and Mediterranean climate of this terroir allow the grapes to reach optimum maturity. 

As a result of yield control the domain produces wines of superb quality. 

 

Winemaking:

 

The Sauvignon, which is harvested at peak maturity, undergoes skin maceration for 6 to 12 hours before being pneumatically pressed. 

During the entire winemaking process the grapes, the juice and the wine are protected from oxidization. 

Fermentation takes place under controlled temperatures of around 16° and the wine is then matured on fine lees.
