They combine traditional and progressive techniques in order to ensure the highest quality possible and allow the wines to reflect the true essence of their Burgundy terroir.
The Domaine uses sustainable methods to cultivate its 9 hectares of vines.
The work in the winery is carried out using the same approach as in the vineyards: as simply as possible in order to let the terroir reflect its own personality.
The wines are aged in French oak barrels for approximately 12 months before being sealed with high-quality Spanish corks in order to guarantee optimum conservation conditions.
Vinification:
Total destemming, conveying respecting the integrity of the berries, then fermentation in vats wood and concrete.
Gentle extraction with few punching-downs for a fermentation time of 2 to 3 weeks.
Pneumatic pressing of the marc then pouring after settling of the free-run wines and press.
Aging in Allier oak barrels, 20% of which are new.
After 12 months of aging in barrels and the malolactic fermentation completed, the wine is assembled in vats for 3 to 6 months before being lightly filtered on plates of cellulose for bottling.
