The soil in the vineyards of Châteauneuf-du-Pape is unique in that it contains rounded stones that absorb the warmth of the sun during the day and heat the vines’ roots during the night, which makes it ideal for viticulture.

Climate:

The vines in these vineyards benefit from a great deal of exposure to the sun which is mainly due to the effect of the Mistral wind which lessens precipitation and the damage it can cause to the vines.

Grapes:

From selected plots, old vines over 50 years old located on the best soils.

70% Grenache 15% Syrah and 15% Mourvèdre.

Vinification:

Manual harvesting with severe sorting in the vineyard, light crushing and total destemming.

Traditional fermentation in thermo-regulated concrete tanks and frustoconical wood, vatting for 30 days with controlled temperatures.

Beginning of fermentations at low temperatures, no addition of yeasts (indigenous yeasts).

Windings / pigeages / daily shedding.

Cuvaison of 4 to 5 weeks.

Pressing with pneumatic press and separation of juices from presses and juice of drops.
